Fable III has framerate issues, but it's not because of visual intensity, rather shady and lazy coding i suspect. Fable II looked better and ran better. I can say in my personal experience, using the VGA cable wasn't very good.
I remember on Ghost Recon it caused some of the HUD to be cut off and I never felt like the picture was accurate to how I thought it was "supposed" to be.
I also never felt like the colors were good - seemed washed out. And I agree with others regarding console v PC graphics. But, honestly, it comes down to the game.
